Ingredients
1/2 Kg Chicken Drumsticks
1 Teaspoon Kosha Salt
5 Tablespoons Plain Flour
2 Tablespoons of Fine Cornmeal
5 Tablespoons of Peanut Oil
3 Tablespoons of Ketch-Mi Sauce
Prep Time: 30 Mins (plus marinading). Cook Time: 45 Mins
Instructions:
Place chicken drumstick in a bowl.
Season with salt and your Scotch Bonnet Ketch-Mi Sauce.

In another bowl put in the plain flour, fine cornmeal, add a bit of salt and mix. Take the chicken and coat it in the plain flour and cornmeal mixture.
Heat a pan of peanut oil (or any oil you prefer) and place it in the chicken to brown.

Once browned, transfer the drumstick to a sheet pan lined with parchment paper and put in a preheated oven at 200f and cook for 40 minutes turning once or until cooked.

Serve with salad, coleslaw or with fried dumplings and a bit of the Ketch-Mi sauce, or with all of the above. Enjoy!
